Lemon Scones

Servings: 6

  • 1 1/2 cups Flour
  • 3 tablespoons Sugar
  • Lemon peel, grated from 1 lemon
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • 6 tablespoons Butter, chilled and cut into small pieces
  • 9 tablespoons Whipping Cream
  • 2 tablespoons Lemon Juice

    Mix flour, sugar, lemon peel, baking powder, and baking soda in bowl. Add butter and blend by hand or by blender until mixture resembles coarse meal. Add whipping cream and lemon juice. (May need to add slightly more whipping cream.) Blend until soft moist dough forms. Pat into round about ½ inches thick on a Silpat covered cookie sheet. Cut into 6 wedges. Move apart slightly. Bake until lightly golden, about 20-25 minutes in a 350 F degree oven.
